Migas is my "go-to" breakfast. Easy, quick(ish), and bomb. A couple of little twists too. It's not too filling, full of goodies, and for the people. Migas vs. Kimchi Fried Rice is mood-influenced. Tell me what you think?
Ingredients
4 corn tortillas, sliced into match stick sized pieces
1 jalapeno or anaheim (less heat), seeded, stemmed, and micro-diced
1 small yellow onion, diced
4 cloves of garlic, diced
4 eggs, beaten
avocado, sliced
sour cream
cotija cheese (crumbled)
shredded mozzarella
salsa verde OR bottled green hot sauce
olive oil
butter
Directions
- slice tortillas in to strips and fry with oil, butter, and sea salt (remove when crispy)
- saute onion and jalapeno/anaheim pepper
- add garlic just before onion is translucent
- add 4 beaten eggs
- cook slowly.
- plate eggs first. top with sliced avocado, sour cream, salsa verde, cotija, mozzarella, and tortilla chips
