A Cubano is salt, acid, and fat. All of my favorite things besides baseball. A grilled sandwich filled with pork, cheese, pickle, and lots of mustard. At minimum, the Cubano will be my gameday snack.
Ingredients
Pork Tenderloin
Orange Juice
Lime Juice
Garlic
Cumin
Smoked Paprika
Black Pepper
Kosher Salt
Brown Sugar
Olive Oil
French Bread Rolls
Butter
French's Mustard
Deli Ham - sliced
Pickles - thinly sliced
Swiss Cheese slices
Recipe
Marinate the pork tenderloin in the first set of ingredients by first processing marinade until smooth and pouring it onto the pork. I like to use a large ziplock bag for the pork and marinade. Let marinate for at least 90 minutes.
Preheat the oven to 450°. Cook in oven for 25 minutes or until pork reads 140°. Let rest for at least 10 minutes and carve into thin slices.
To assemble the Cubano:
butter the outside of the roll on top and bottom.
liberally slather French's yellow mustard inside both sides of the roll.
layer Swiss cheese
layer thinly sliced cooked pork
layer thinly sliced pickle
layer Swiss cheese
layer deli ham
layer Swiss cheese
repeat as many times as you'd like
Place on hot panini grill or pan with butter on both sides of roll.
Place sandwich weight/smaller pan/something heavy on top of the Cubano if grilling in a pan. The weight is used to compress the bread and sandwich, creating a crusty, crunchy exterior.
Without burning the bread, remove when all Swiss cheese is melty.
Slice Cubano diagonally and enjoy.
